Millionaire's Shortbread | Recipe

I spent yesterday baking for a charity coffee morning at Chris' work. That's right not even for my own work, for my boyfriends. How very housewife of me.

I was certain I didn't want to make cakes as I figured this is what the majority of the other wives/girlfriends would decide to do; and I knew it had to be something that would feed a large number so I came to Millionaire's Shortbread.

These beautiful little things are great as they were actually pretty simple to make; as well as quick and because they're so sweet you only want a bite-sized portion.

Millionaire's shortbread is actually one of my favourite treats; even if they do send me in to a slight sugar coma and so I sneakily kept some back to enjoy myself :)


Shortbread -
225g plain flour
175g unsalted butter
70g caster sugar

Caramel -
150g unsalted butter
375g tin of condensed milk
70g golden syrup

Chocolate -
300g melted chocolate - I used a mix of milk & dark


1. Preheat oven to 150c and line a large square tray with baking paper (I greased mine a little)

2. To make the shortbread combine the flour and the butter in a food processor until it resembles breadcrumbs, then pulse in the sugar slowly.

3. Tip the mixture in to the tray and bake for 30 minutes - take out the oven and let it cool down slightly

4. To make the topping heat the butter with the condensed milk and syrup until melted and smooth

5. Bring the mixture to the boil, but be careful not to boil for to long as it will burn in a second!

6. Once done allow to cool slightly before pouring over the shortbread then leave it to cool

7. Whilst cooling melt the chocolate over a bain marie, once melted and smooth pour over the caramel.

8. Cool in the fridge until the chocolate is hard.

9. Cut in to squares and tuck in!
