Spanish Chicken Tray Bake | Recipe




I adore easy recipes that involve one pot, pan or tray but are still packed full of flavour.

This is one of my all time favourites and is adapted from Nigella's spanish chicken recipe.

Do I need to put instructions? You literally put everything into a baking dish and cook for around 40 minutes. It's THAT easy. (And tasty!)

Ingredients (serves 2):

1 tbsp olive oil
2 x chicken breasts
1 tsp paprika
1 tsp oregano
Handful of cherry tomatoes, halved
1 small onion, roughly chopped
80g chorizo
2 garlic cloves, finely sliced
2 medium sized baking potatoes, peeled and cubed
Black pepper to taste

  2. Yum! Looks lovely :) I tend to be really lazy and use cooking sauces a lot - the Chicken Tonight Spanish sauce is delicious though but this is probably even tastier!

    1. Hehe I think we are all guilty of being lazy sometimes but try it if you get the chance, it's super easy and just as lazy!
