Spanish Chicken Tray Bake | Recipe
I adore easy recipes that involve one pot, pan or tray but are still packed full of flavour.
This is one of my all time favourites and is adapted from Nigella's spanish chicken recipe.
Do I need to put instructions? You literally put everything into a baking dish and cook for around 40 minutes. It's THAT easy. (And tasty!)
Ingredients (serves 2):
1 tbsp olive oil
2 x chicken breasts
1 tsp paprika
1 tsp oregano
Handful of cherry tomatoes, halved
1 small onion, roughly chopped
2 garlic cloves, finely sliced
2 medium sized baking potatoes, peeled and cubed
Black pepper to taste
