I know what you’re thinking, I’m crazy right. Well, yeah but
no! I honestly got 10 meals from a leg of lamb. I’m going on the whole Jamie
Oliver phrase of you’ve got to spend big to save big and while I really fancied
roast lamb for dinner on Sunday looking through the supermarket was depressing –
it’s so expensive!
I went over to the butcher bit of Tesco and asked what I
should do. Well long story short, I managed to get a flipping huge roast leg of
lamb (as you can see above) for just over £14.
Yes, I know £14 for one piece of meat may seem a lot, BUT
remember I got 10 meals out of this bad boy!
So without further a due, here are the 3 recipes I did that
in return provided me (and Chris) with 10 meals.
Roast Leg of Lamb
with roast potatoes, veg & gravy
So this was the main meal, the meal that caused me to spend the
£14 in the first place because I really wanted roast lamb!
I used this BBC Good Food recipe to baste the lamb and served with roast potatoes, peas, carrots,
broccoli and gravy.
Moroccan Lamb Stew
with cous cous
Makes 4 portions
This is a great, quick and easy recipe that works perfectly
for 4 adults or 2 adults and then 2 portions of lunch the next day.
You will need:
Half of the leftover lamb, chopped into chunks
1 onion, finely diced
1 onion, finely diced
2 cloves garlic, crushed
1 tin of chickpeas
1 400g tin of chopped tomatoes
3 salad tomatoes, diced
3 teaspoons of harissa paste
2 teaspoons of paprika
salt & pepper to season
1 tin of chickpeas

2 packets of ‘Just add water’ cous cous – I used the tesco Mediterranean
vegetable one, and the roasted vegetable one.
Recipe: fry the onions & garlic, marinade the lamb in 2 teaspoons harissa paste, add lamb to onion and garlic mix, add all tomatoes and chickpeas, add paprika, one last teaspoon of harissa and salt & pepper, leave to stew for 15-20 minutes

The remaining lamb has been chopped up and been made into this
Jamie Oliver Lamb and Red wine Stew which I will then divide into 4 Tupperware
boxes and stick in the freezer to defrost for future dinners to serve with mash
or crusty bread.
