Recipe: Angel Cake Slices

Angel Cake Slices Recipe

If you follow me on Twitter you may have noticed I have been craving angel cake for what feels like a year. I don't know why, I get it every so often and I really can't let it go...I have to have some! I sound like an addict. Cake addict.

One of my favourite 'supermarket' cakes from my childhood is angel layer cake. It was such a weekend treat to have some angel layer cake, or if my mum was feeling really kind the Mr Kipling slices. Mmm.

Home-made 'Mr Kipling' Angel Slices

So, to cure my craving instead of doing the easy thing and buying some, I figured how hard can they be to actually make? Turns out not too hard! Okay, so they don't look exactly like the Mr Kipling Angel Slices but I reckon they're a pretty good home-made alternative, plus they taste the same and they're bigger so really, just for that alone, they're better. Ha!

Makes 10 Angel Slices

225g unsalted butter, softened
200g caster sugar
4 eggs
1 tsp vanilla essence
225g self-raising flour
1/2 tsp baking powder
Yellow food colouring
Pink food colouring

For the buttercream:
150g icing sugar
70g unsalted butter, softened
1 tsp vanilla essence
splash of milk

For the icing decoration:
100g icing sugar
4 tbsp water
Pink food colouring


1. Preheat the oven to 180c and grease and line two 20x20 square baking tins

2. Beat together the butter and sugar until soft and creamy

3. Beat in the eggs, one at a time, and with the final egg add the vanilla essence. Mix until well combined.

4. Fold in the flour and the baking powder and when all mixed together, divide the mixture evenly between two bowls.

5. To one bowl of mixture add enough yellow food colouring to get a nice bright yellow, and then with the other do the same with the pink food colouring to get a nice bright pink.

6. Add the yellow mixture to one baking tin, and the pink to the other then bake in the preheated oven for 20-25 minutes or until cooked through.

7. Leave to cool in the tins for around 10 minutes then turn out on to a wire rack, peel off the greaseproof paper and leave to cool completely.

8. To make the buttercream, beat together the icing sugar and butter until well combined, add a splash of milk and the vanilla essence and continue to beat until well 'whipped'

9. Once the cakes are cool, take one of them and slice down the middle vertically, and then take each half and slice horizontally into about 5 slices. Repeat with the other cake.

10. Take a pink slice and a thin layer of buttercream on the top (the most colour side up) then top with a yellow slice. For the end pieces you may need to trim the edges. Repeat until you have 10 angel slices.

11. Make the royal icing and spread a thin layer across the top of each angel slice. Once they are all covered, add a little pink food colouring to the remaining icing and drizzle across each slice in a zigzag pattern.
