Lemon and blueberry madeira cake

The Great British Bake Off is back and this year I have decided to join in a bloggers bake along! I'm really excited to try some new bakes that I probably haven't made before and challenge my skills and creativity, and I'll be blogging them all - even the failures!

Last week's Bake Off saw the bakers put to the test in creating madeira cake, walnut cake and black forest gateau - not being a fan of black forest gateau I decided to go for the madeira cake as, ashamedly, I hadn't baked it before. Using the Mary Berry recipe from her baking bible cook book, I adapted the recipe slightly to have a lovely zing of lemon and some juicy blueberries in it. I was super happy they didn't all sink to the bottom!

Lemon & Blueberry Madeira Cake Recipe

Whilst it wasn't perfect, I did manage to get a lovely bake and a crack - although this could have been bigger! I can't believe what an easy cake this was to make, I'm sure the challenges will get harder as the week's go on. Wish me luck!

175g unsalted butter, softened
175g caster sugar
225g self-raising flour
50g ground almonds
3 large eggs
1 lemon, zest and 1/2 the juice
100g blueberries
Icing sugar, to dust


1. Preheat oven to 180c and grease and line a medium-large loaf tin

2. Put the blueberries into a bowl and coat them with 1 tbsp of the flour

3. Put the butter, flour, sugar, almonds, eggs and the zest & juice of the lemon in a separate bowl and mix together until well combined and smooth

4. Fold in the flour covered blueberries then pour the mixture into the loaf tin and level the top

5. Bake for 1 hour, until a knife comes out clean, leave to cool for 10 minutes in the tin before transferring to a wire rack.

6. Gently dust with icing sugar to decorate.
