Baileys Hot Chocolate Layer Cake

Birthdays call for cake. Big layer cakes. Preferably with lashings of chocolate and cream.

I’m not sure if I have mentioned this before, but Chris’ mum is probably my biggest fan. She is constantly praising my bakes, to me and to strangers (awkwardly) and begging me to bring over cakes I have made. So when her birthday comes around I like to make her something special. Something that reflects her and what she likes so it’s a cake for HER birthday – y’know?

With ice on the ground, everyone was feeling rather chilly this year around her birthday, so I’m pretty sure I was cuddling up with a hot chocolate when an idea sprung to me. Combining chocolate cake (her favourite kind) and her favourite tipple, Baileys, I could recreate a Baileys Hot Chocolate, in cake form.

Three Tier Baileys Chocolate Cake

A light chocolate sponge filled and topped with lashings of baileys buttercream frosting and topped with mini marshmallows and cocoa powder this really was a cake fit for a birthday celebration – and went down a treat! 


For the cake:
275g butter
250g self-raising flour
200g caster sugar
25g cocoa powder, plus extra for dusting
4 large eggs
1 tbsp milk
15g mini marshmallows

For the Baileys Buttercream: 
200g butter
600g icing sugar
5 tbsp Baileys or Irish Liquor


Preheat the oven to 180c and grease and line three 8" cake tins.

Cream together the butter and the sugar until smooth and then add the eggs and beat until light and frothy.

Sift and gently fold in the flour and cocoa powder until well incorporated, and add a tablespoon of milk to loosen the mixture slightly.

Divide the mixture between the three tins and level the surface. Bake in the oven for around 20-25 minutes until cooked through and springy in texture - check by inserting a knife or skewer into the middle of the cake, if it comes out clean it is cooked.

Whilst the cakes are cooling on a wire rack make the buttercream by beating together the butter, icing sugar and Baileys.

Assemble the cake by taking one sponge and topping with enough buttercream to cover the surface, top with the second sponge and repeat, top with the final sponge and top with the remaining buttercream going down and covering the sides as well for a rustic look.

Top with marshmallows and a dusting of icing sugar.

  5. If your ice making machine is going to provide ice for a large volume, then you will need more of a commercial unit. Jerry
