When I saw that Cadbury were setting up a Creme Egg cafe in London, I was excited, mainly because I thought if I managed to secure tickets then I would be awarded major girlfriend points - Chris is the biggest creme egg fan I know, but I failed so nil pois for me. However, when I looked at the menu in more detail I was a little underwhelmed. I mean yes, it sounded ace, but I thought 'I can totally do this at home' - so I did, but I made it better.
Take some brioche, delicious by itself in any case, along with some creme eggs, marshmallows and a hot frying pan and something truly magical is created. Something you eat knowing you're giving yourself diabetes but it's too good to stop. That's what this toastie is.
Super quick to knock up, and easy enough for ANYONE to have a go, if you're going to try any creme egg recipe this year then I urge you to just give it a whirl.
Perhaps don't eat any more sugar for the remainder of the day though.
Makes 2 toasties
Ingredients
2 Creme Eggs
1/2 cup mini marshmallows
4 slices of Chocolate chip brioche bread (plain brioche would work fine too)
Butter/Margarine
To decorate;
4 tablespoons icing sugar
Water
Method
Cut the creme eggs in half, down the middle.
Butter two slices of the brioche bread.
Build your toasties by taking a unbuttered piece of the brioche and placing two creme egg halves on top and half the marshmallows. Top with the buttered piece of brioche - Butter side facing up!
Make the icing but mixing together 4 tablespoons of icing sugar with just enough cold water to make a thick icing, do this a tablespoon at a time and stir in between.
In a frying pan, on a medium heat, melt a teaspoon of butter then place the built up brioche sandwich in the pan (Butter side still facing up). Press down hard with a spatula to flatten it, leave for around 2 minutes before flipping onto the butter side. Again, press down hard and fry for around 2 minutes. Repeat the process with the second toastie (or however many you are making).
Remove from the frying pan and drizzle with the icing. Cut into triangles. Dig in!
