I know it's January and everyone is healthy but sometimes you just need a treat. A naughty chocolate treat. It's been one of those weeks, and after three and a half weeks of doing the Insanity workout and trying to eat healthy to shift some weight, I needed brownies. I caved, and you know what - I'm not even sorry.
It’s been a while since I have posted a recipe for you all but I promise you this one will have made the wait worthwhile. Totally indulgent, these would be perfect for a party, picnic, birthday or just a duvet day at the weekend. Think chocolate, then add more chocolate, oreo biscuits and delicious fat marshmallows. These brownies are next level and so easy to make.

HOWEVER, and this is very important, you really need to make
these the day before you intend to eat them as they taste so much better the
next day. Trust me on this.
Gooey chocolate brownie filled with crunchy oreo pieces and
topped with melted marshmallow and more oreo. I mean come on what’s not to like
here. These are the definition of naughty.
Makes 12 brownies
Ingredients
185g unsalted butter, softened
170g dark chocolate
80g plain flour
30g cocoa powder
3 large eggs
200g caster sugar
14 oreo biscuits
12 big white or pink marshmallows

Method
1. Melt the butter and chocolate together over a bain-marie
until smooth and velvety. Put to one side to cool slightly.
2. Preheat the oven to 160c and grease and line a 20cm
square cake tin.
3. Beat together the eggs and the sugar until thick, creamy
and frothy.
4. Pour the melted chocolate into the egg/sugar mixture and
gently fold together until well combined. Sieve in the flour and cocoa powder
and gently fold this in to the mixture too until it looks fudgy.
5. Take the oreo biscuits and break into large chunks. Pour three quarters of these pieces into the brownie mixture and give a final
stir. Pour the brownie mixture into the cake tin and smooth over until level.
6. Place the 12 marshmallows on top of the
brownie mixture, evenly spaced out, pushing them only slightly into the brownie
mix then take the remaining chunks of oreo biscuit and sprinkle over the brownie mix.
7. Bake in the pre heated oven for 25-30 minutes. The brownie mix should be starting to crack and the marshmallows melted and slightly brown. Take out the
oven and leave to cool completely in the tin. Remove and slice up into 12 once completely
cooled.
If you're going to fall off the wagon, you have to do it in style!!! These look absolutely DIVINE!!!!!! I'm going to make these with my kids next weekend :-)
